Title: Need help... Ounces of wood for 9lb boston butt bone in
Post by: Three Sons BBQ on December 24, 2013, 05:20:02 AM
I'm going at 215... As slow as possible... But this is only second use...

How much wood for an si3?

I have cherry, apple, and hickory.

Thoughts on Apple and Hickory mix of 2.5 ounces each?

Any advice appreciated.

5-6 oz would fit the bill. The last butt I smoked was around 9 lbs and used 6oz.

Depending on you appetite for smoke you could lower from 6 oz.

I usually go with less wood. I stay in the three to four ounce range for my longer Cooks. Maybe a little more if I'm using mild wood and a littke more if I'm using a stronger would. If you're using the Hickory that came with the cooker it's fairly strong. If you have any Kingsford Charcoal on hand try putting a lump of that in there as well.

it does all comes down to your appetite for smoke flavor. Some folks certainly like a stronger smoke flavor than others

Going with 5.5 and all apple which is more mild.

Should do fine with 5.5.  I always go 5-6 on butts.  I personally don't like pure apple; gotta mix it with hickory.  It's mild, but has an odd flavor that people seem to love or hate.  I love hickory, or hickory and cherry for pork (just my opinion based on my taste).

I'm the opposite.  I use to be a Hickory nut and didn't like Apple.  Now, it's the opposite.  I don't use Hickory much at all and use alot of apple.

I will agree about pure apple.  I almost always go Apple and Oak these days.  Oak is mild and very "neutral" (if that's even an adjective for wood smoke).

I agree, Rick - oak is a good mix, too.  The pure apple is definitely an "acquired" taste!
