1st smoke

1st smoke in#3. Couldn't wait to finish outdoor kitchen build. Took Divotmakers advise. Have been smelling unbelievable smoke and BBQ all day while working outside installing gas line for kitchen. I am loving this thing. Have 3 racks of ribs going sunce 10:30 am,6 hours. Put them in at low temp, 225 since i had a kids vball game to get to at 11am. Just checked them after 6 hrs, still need a bit more time.

Not sure how the food is yet, but if nothing else this thing is a great incense burner!!!😂

6 hours is a long time for ribs. I do mine at 225 and am eating after 5 hours or so.

You doing spares or baby backs, Tim?  Not unusual for spares to go longer than 6 hours!

I did spares, but they were rather meaty, $42 bucks worth from SamsClub. I thought it seemed like a long time, but they were still moist enough and definitely falling off the bone. I slathered with mustard (per Divotmakers advise - again) and stole somebody's rub recipe off the this site. I was so anxious to try the smoker that I wasn't able to let them sit overnight to "get happy". I simply slathered, rubbed, and threw into he box with 2 chunks of hickory then headed to daughters Volleyball game. Oh, and I did put in a small pan of apple juice as well.

When I returned from game the smells were tremendous. I got to work outside until it started to downpour. Then I popped open a Shiner Bock and sat on the porch next to the smoker just enjoying the smells. By the time I took them out I was so hungry I didn't think about taking a picture of them . In any case they were nicely barked and the family loved them as did I!

I was skeptical about how much smokey flavor I would get from 2 little chucks of wood (as I'm used to burning about half a cord) but I'll tell ya, these were plenty tasty. I'm very impressed so far. Cant wait to do a brisket!
