This is a great forum. I've been lurking here for over a year, learned a lot, and thought it was about time I register. Got the Model #1 in summer 2021 and have been having a lot of fun backyard smoking out on the lanai.

I still have a LOT to try, but my favorites so far are fish all the way, and bacon. Pics attached of my first salmon smoke and another fish smoke.

Over this past year and a half I've made extensive use, in particular, of the Lazy-Q book and Pork Belly's "Dry Cured Bacon" thread. In fact I just finished making some Christmas bacon yesterday that I'm pretty excited about. It's in the fridge until Christmas morning, at which point I'll have to take some pics and post results...

welcome to the forum.  I originally bought my #1 for just camping, but find I use it a lot doing smaller smokes instead of my #3.
