removable probe on rear of smoker

I have a model 3 and wsd 1200gph auber. Would it be possible to have a insulated hole all the way through the back of the smoker with a hole the size of a temp. probe. During the smoke it would act as a permanent probe, but easily removed for cleaning and dry storage.

Settle back for a good long read. I don't know of anyone who installed a probe through the back outer and inner wall.  However, plenty of folks did install an Auber probe.  Here are some links and lots of photos. Grab a cup of coffee and enjoy!
