This Christmas I needed a side dish to go with a smoked ham.  I chose a very conventional bean recipe that's served me well for several decades.  It's not a barbecue recipe and goes well with winter time meals.  For the bacon I double smoked some store bought bacon pieces.  I used Fletchers in a 2 pound package, tide it with string, hickory and apple mix, 150 degrees to an IT of 130.  I took a taste and it turned out perfect.  Tomorrow I'll warm it in the oven for dinner.

At 300 degrees this recipe is more of a low and slow than most.  These beans were done in 5 hours.  The texture seems to be nicer than cooking at the more common way at 350 for less time.
