Hey from Iowa!

Just ordered my Smokin-it #2 yesterday. Despite my username, I am complete newb when it comes to smoking.  Very excited to learn, and more importantly eat!

Thanks for all the great info, Ive already lurked around a little--

Welcome from Iowa! I got my #2 in December and have loved it. I'm sure you will too. Add your name/location to your tagline for more personalization. Most typically do that on this Forum since we are basically family.

I am from Waterloo Iowa and my #1 is arriving today.  I have worked with a 6 foot tall Cookshack model years ago and ready for brisket and ribs again.  Jim

I've been searching over this site for a few days and I am ready to introduce myself.  My name is Jim and my wife Linda and I have been married 41 years and have two grown daughters.  We live in NE Iowa and both work in the area at two different businesses both in customer service.  In the past I managed grocery stores and managed a BBQ restaurant.  At the restaurant we used Cook Shack Smokers, so my #1 smoker is a mini to what I used in the past.  I am not new to smoking as in the past I used my Weber grill, Brinkman Smoker, and a Big Chief smoker.   
I ordered my #1 on 7/29/15 and it arrived on Friday 2 days later.  Saturday  I seasoned it and later in the day smoked 3 racks of baby backs for 4 hours at 225, they came out perfect.  When I have the time I can't wait to do a brisket.  At the restaurant we cheated and got our marinated briskets from the Vienna Beef Co. out of Chicago and smoked them for 2 hours at 300, so a 12 - 15 hour smoke will be a new to me.  I will update you when I do a brisket.
