Smoked Deviled Eggs

Smoked Deviled Eggs

12 large eggs (smoked)
4 T Mayo
2 t yellow mustard
1 T pickle relish
Salt and Pepper to taste
Paprika (for dusting)

Smoke at 225 degrees for 2 hours, remove from smoker and place in ice bath for 10 minutes, then peel.
Cut eggs in half, add egg yolks and the rest of the ingredients (except the paprika) into a bowl and mix together. You can add more mayo if they seem a bit on the dry side. Put your mixture back into the holes in the eggs and then dust with Paprika.

If you are already doing a smoke, throwing in some eggs it easy. Just make sure when you pull the eggs to put into an ice bath before you peal.

Do these eggs take the smoke through the shell?
