Hello All,

I just aquired a new to me #2 Analog.  My plan for it was to finish my meats I start on my offset and/or to use this as a holding oven at around 150-170 until time to eat.  I am looking at getting an Auber PID to hold the temp consistently but I was wondering if I should also do the bypass mod?  Do you guys use these to extend the hold time for meat? if so how well do they work? do you add any humidity to the chamber if you do? Thanks!  Im looking forward to using this gu it seems like a solid machine.

I hold my pork butts in my #3 and #1 for 1-3 hours at 140 for an extended rest. I don't add any moisture during the cook or during the rest period.
I have left my units stock. But if I was to do the PID mod, I would use the DPDT switch by pass.  That way I could use either the PID or analog.

Welcome from central TX. I just added an Auber AW-WST1510H-W to my #2 analog. I did the SPST bypass and I am very happy with my cooks since the PID upgrade, but I have not done any extended rests in it yet.
