Brining the Brisket.

Ok. So, I am doing a brisket in the #1 this weekend. It's about 12.5 lbs pure trim. Going to have to slice into 2 pieces to fit in the #1.
Here is the question. How long is the brine time for this? I am estimating the larger portion of meat will be 5.5ish pounds. Would it be around 12 hours or would it be less as the meat is 2 pieces instead of 1?
Thanks for the info!!!

My answer would be that it could be less but doesn't need to be less. An hour per pound is a common rule of thumb but overnight won't hurt it either. Just remember to rinse well regardless of the brine time and you should be fine.
