Whole Packer in 2D
« on: November 13, 2023, 05:26:49 PM »
What is the general census on fitting a whole packer brisket in a 2D size smoker?  Can I get a smaller sized brisket to fit, assuming a bit of trimming and maybe putting it in at an angle?  Thanks.

Hope you smoked this by now - I?ve gone at an angle and place a small stainless mixing bowl under the brisket to get that extra room.  Learned that from Harry Soo for my WSM.  Works great in the #2.  By the time you wrap, you can remove the bowl if the brisket did not already slide off.

PS - wife may not respond well to use of mixing bowl.

You can tuck the flat under the point, maybe use a skewer to hold. You may still need to place it at an angle.

Never thought about a brisket skewer of sorts - will have to try that one.
