Welcome to the club! There are a lot of knowledgable people on this forum.  i have learned so much over the past few months.  I ordered my #3 in may.  Two smokes in for baby back ribs.

Hey Yabo,
I just got back from Restaurant Depot and picked up some pork Baby Back ribs..they had some thawed and just put out some new frozen (they way they are shipped) and placed in the back of the fridge. They are cryovac wrapped so will not seep or touch air. FedEx claims the smoker will arrive tomm. but I work 3-11, so I will season it Tursday or Friday and Smoked em on Saturday afternoon. I'll be using a dry rub, starting simple with a Southwest spicy mix from McCormick that is sold as a culinary spice. Starting slow without any special tricky stuff...I'm very analytical, so I'll be keeping a record of all smokes and results...more than likely pics as well. I have a Foodsaver that vacuum seals so even living alone I'll be able to smoke in quantity and save leftovers in a quality style. Plus, if I need them, my Fire Department will volunteer to try some of my experiments.
