Chuck Roast

I bought a chuck roast to do a pot roast in the pressure cooker.  Having never smoked beef, I wonder can a chuck roast make a good smoker cut, or just pressure cook it?

Absolutely!  The chuck roast smokes like a brisket, and is great to use as a substitute for burnt ends!  Good fat content, so it keeps the moisture up (like a brisket point).  Rub it, and smoke at 225 until it hits around 195 internal temp, and you'll be good!

Hey William, I have also pulled it at 140 and finished in a crock pot with veggies. Favors everything really nice.

I believe them to be dry unless they are braised after the smoke period.

I picked up a 2-pack from Sam's today (total weight 7.5 lbs).  I'm going to inject tonight, smoke tomorrow, then cut up and make burnt ends.  I'll post this whole process in another thread.
