Got a 12 lb select cut @ SAMS yesterday for 3.48/lb.

At Sam's and Wallyworld, here in the land of their HQ, I've never seen anything less than Choice on brisket - surprises me that they push off the Select stuff to other markets!

BUT, with your prep method, bet it doesn't make much difference! ;)

The flats I usually grab are Choice &  I didnt even notice Select until I got home. After brineing & injecting it will be fine.

I have never seen a packer at my local Sams Club or Costco only flats.  I usually get choice packers at Walmart.  If I remember Robert Wholey in the strip (a large fish market) had packers but that was a few years ago.  I talked to a local butcher shop, one of the few left, and he said he could order them.

The packers the local place had were select instead of prime and didn't look great.  Went to wally world and got a choice for cheaper.

I was in Wal Mart today and the brisket they had, had a thicker fat cap than flat.  LOL!

Hit and miss sometimes, I guess, Dave.  Hate to pay for fat, but it can always be trimmed, if the meat looks OK, and the price is right! ;)

The one I got from Wally World was pretty good looking.  Didn't have to trim much to get the 1/4" fat cap.  Got it trimmed pretty good following Aaron's YouTube video.  Got it marinating for its date with the SI3 tonight.

Finally got my heatermeter PCB, going to be building that once I get back from going take 6 month old photos with my daughter.

Late to the game but flat cut at Costco $6.99 lb for choice. Naples, FL

Great deal on the packers, and always the best choice!  Why pay double for a flat only?

Packers have quite a bit of weight in the fat cap from what I've noticed. Next time I do one I should measure the weight of the fat cap portion I remove. I try to get it down to about 1/4" before cooking.
