Pulled Pork Egg Rolls

I used left over Pulled Pork Butt to make Egg Rolls and Pork and Seafood Fried Rice. Pretty good results, we will be doing it again.

Now that looks good!  Did you get tired of pulled pork sandwiches?

I've mixed it with eggs for breakfast...that's good too.

We did sandwiches for the Cat Zingano beat down, just wanted something new. Likely we will finish off the rest in some pulled pork nachos Sunday.

Didn't have a recipe I just threw them together. The following is pretty close to whats in there:
2 grated carrots
1/2 head of Napa Cabbage, sometime called Chinese Cabbage finely chopped
1/2 head of Bock Choy Cabbage finely chopped
5 green onions chopped
large handful of pulled pork
1/2 tablespoon each ginger and garlic powder
3 tablespoons corn starch
4 tablespoons soy sauce
Mix all ingredients in a large bowl
place approx 1/3 of a cup of this mix in one egg roll wrapper, roll and seal per package instructions.
I fried them in peanut oil, medium high heat, roll them to brown both sides.

* I recommend you sacrifice one wrapper to use as a patch kit. You can glue scraps of it onto egg rolls to cover any holes or tears. Buy more wrappers than you think you will need the first few times you make them.
