Baby Backs with Excalibur Hickory Char & Thyme rub

I smoked two racks of Baby Backs tonight and on one of them I tried a new rub that I got from Excalibur called "Hickory Char & Thyme":

The Hickory Char & Thyme rub was OK. But, I think it may be better on poultry. And while I thought I shook it on pretty liberally, I couldn't really taste the flavors very well.

On the other rack, I used my tried and true Excalibur BBQ Smokehouse Seasoning and that rack was awesome as usual:

This was my first smoke of ribs at 235 (have always done 225 before) and I think I left them in a little too long. We had a rain storm come through and while my smoker was out of the rain, in order to get to it I would have gotten soaked. So, I let them go about 5.50-5.75 hours until the storm passed when they should have come out right at 5 hours. Next time, I know that I need to at least check them at the 4.5-5.0 hour mark.

All in all it was a successful smoke and between my two teenage boys and I we polished off two full racks of ribs. I am stuffed right now as I am typing this even after eating 4 hours ago.

The ribs look great. I have been tinkering on the time. Start at 5.45, then 5.30', then 5.15'. I found all cook times are good. Next time 5 hours. I found the water pan is a must. I use plain old water.

I bet the thyme rub would be great on poultry - let us know, if you try it!
