brisket and ribs how to.

Hello every body. Got a prob how do I do a 14 lb brisket that takes 24 hr then ribs that take about 6 hr. Do I put brisket and ribs in together then pull ribs after smoke done. then put back in so there done at same time.or put in later and run more smoke. this is compatition si #3 against wood charcole cooker.going to be fun but not shure about how to do both. thanks

Hmmm...interesting one, Randy!  I think I would start the brisket, then put the ribs in about 4 hours before the brisket is done.  When the brisket hits temp, pull it and double-wrap in foil to rest in the cooler (under a towel, of course).  Then, the ribs should be done by the time the brisket rests 1-2 hours.  You'll have to open the door a couple of times, but it should be OK by that point of the brisket smoke.

what about smoke for ribs.
If it walks, crawls, slizzers, or even grows from the grownd smoke it.

Would you need to add wood when you add the ribs?  I would think the ribs wouldn't get much smoke since most of the smoke seems to get laid down in the first 3 to 4 hours?

I think I would pull the old block and add a fresh one to the back of the firebox. I haven't had a problem doing this unless the bottom shelf is loaded.

Another good question about the smoke!  I agree with Brian - you can add another 2-3 oz of wood when you put the ribs in.  Just gotta be careful!  That smoke box is pretty hot!  I use tongs on the rare occasion I do this.

well it all worked out great. put brisket in at 4 pm put ribs in at 11:30am with new batch of wood. pulled brisket 5:45 pm let it rest . pulled ribs at 7 pm and ate. my brisket dominated the one from the wood fire smoker, plus I didnt have to feed my fire every 45 minuets.love my#3
