Title: How much wood?

My Smoke-it model #3 is in shipment and I'm reading about how little wood you want to add to these things. So the way I understand it, you should not fill the wood canister up. How much wood would you want if you were making snack sticks or jerky?

I use 4-6 oz of apple and cherry wood for pretty much all meat smoking.  For cheeses I use 2-4 oz apple, cherry or hickory.  For salmon I use 3-6 oz alder.
Note these are all chunks, no sawdust, chips or pellets.

You definitely won't need much wood with these smokers.   I have a #2 and use about 3-4oz of wood (1 chunk) on short smokes and 6+ oz (2 chunks) on longer smokes (like BB ribs or butts that run for 5+ hours).    I use wood chunks from smokinlicious, but there are a couple of other places mentioned in the forums as well.   Try to avoid dry wood as it will tend to catch on fire (causing the "belch") in the first heating cycle.  I have had good success with smokinlicious wood.
