For any of you dry-agers, Thanksgiving is 67 days away & Christmas is 99 days out. Time to start thinking about sticking that ribeye in the bags for holiday prime rib. Heres mine for thanksgiving put in last Monday. I like to slide the bag in panty hose to ensure maximum bonding with the bags. You can leave in the whole age if you like or take it off ofter the first week. 73 days has been my longest age and it was the best yet. Dont be shy about letting it go a good while. It kind of gets you in the holiday spirit early.

If you get the air out, when vac sealing, why the panty hose?  Just curious...  Have you had problems with the bags bonding?

Plus, it makes the meat feel pretty, while aging gracefully. ;) ;D ;D

Today, I removed the crust, rubbed with EVOO, sprinkled with pepper, granulated garlic, onion powder & vac sealed it. This one went 76 days. It started out @ 17.3lbs & finished @ 12.6lbs from evaporative weight loss & a lite trimming. Very firm texture and a very earthy beefy aroma.
