120 lbs pork butt

Pork butts 5-8 of 12

This is a continuation of the 120 lb pork butts in the “What’s cooking” page (I put it there accidentally)

Procedure was slightly different the butts 1-4

PROCEDURE:
Trimmed more than the first 4, I think it was too much
1/2 cup rub per each instead of 1/3 cup
8 oz hickory in 2 chunks instead of 6oz in 4 chunks
Smoke at 225 till done (around 190) for approximately 16 hrs

THOUGHTS
over trimmed, going to attempt to leave 1/8 inch fat cap next time
Bark was better but still would like more
Would still like more smoke
More dry than normal, especially the outside next to the bark (you can see this in the pictures)

They reached the stall around 6 hours in, and it was high 185F, very puzzling

I made a stock all day using the bones , and any gristle I removed when pulling, reduced it and added back to the pork before freezing in vacuum bags

I might cook butts 9-12 to 175 and slice instead of pull, mix all 3 batches together at serving time, IDK 😐 yet
