Saw this today, would be great in the SI, I've done pre-made bologna before and it was wonderful.
I bet this is $50 worth of meat he's chopping up. Dietz is great, but high end!

My wife and I buy garlic bologna at our market deli counter and have it cut extra thick for fried bologna sandwiches.

I wish could still find just beef & pork bologna like we used to get in the late 50's & early 60's. Frick's makes a really good flavor ring bologna with just a hint of smoke. But, cannot find just the beef and pork in full size bologna.
