great forum! helpful info, helpful people.
i’ve had numerous smokers. most recent was pbc. had to go to electric due to lease requirements. had a cook shack in the past that disintegrated over time. loving my new SI2.
conquered SLC finally:
left membrane, olive oil binder, oakland dust rub, right into smoker, hickory a licious, bones down, 240. took 4 1/2 hours. nice crust, moist, tender with a little pull. mmmmm.
