Has anyone ever smoked the boneless leg of lamb from Costco? It’ a regular item there for may years and the price is right. My other question is the final IT. I’ve always cooked to about 140. I was reading Steven Raichlen’s book Project Smoke and everything he cooks goes to 195. Does anyone have any ideas?

I do my lamb rare-pull at 110 and rest to 120. Medium is 130 rest 140, and well if you are so inclined is 150 rest to 160. Raichlen-, who I like, is simply overcooking his lamb-just my opinion

Seems like it but after reading again, he’s not doing the classic leg of lamb. What’s your favorite wood for leg of lamb?
