Did anyone figure out how to modify the temp controller so you could heat to 350?

Rod, not sure i would run at 350 without checking with Steve. Having said that, and please someone correct me if I'm wrong here, but previously (2015) you mentioned thinking of an oven thermostat but they were 250v. Am I correct in my thinking that if you used a 250v on 120v you will be ok, you just can't use a 120v on a 250. I know we've got some on here with electrical experience on knowledge, but I believe you would be ok on that as it's just a heavier switch. Anyways, hope this might help you out and Merry Christmas to you and everyone else.

The manual for all of the 'D' models come with a very bold warning:

** DO NOT operate smoker above 325° **
*You can damage the box and increase the risk of fire*

My #2 is bypassed. I heat it up to 500deg to cook boneless stuffed whole chickens. If you have a manual model with a bypassed auber all is possible, even if some consider imprudent.

I ordered everything from Smokin it.  The process for bypassing is well documented on this forum.
